Use a 9-inch pie pan.
Heat oven to 425 and prepare pastry.
Mix sugar, flour, nutmeg, cinnamon and salt in a small bowl.
Add apples and sugar mixture to pastry lined pie plate and dot with butter.
Cover with top crust, seal and flute; make slits in cover crust. Cover edge with aluminum foil; remove foil during last 15 minutes of baking.
Bake until crust is brown and juice begins to bubble through slits in crust, 40-55 min.
