Bob's Fruit Crisp

Ingredients
  • 1 1/2 lbs. of frozen fruit
  • 1/4 cup sugar
  • 1 Tbs. cornstarch
  • 2 Tbs. fresh orange juice
  • 1 tsp. lemon zest
  • Topping:
  • 3/4 cup flour
  • 1/2 cup rolled oats
  • 1/2 cup packed brown sugar
  • 1 stick butter
Directions

  1. Prepare the topping
  2. Preheat oven to 400
  3. Combine fruit, sugar, cornstarch, orange juice, and lemon zest in a large bowl. Transfer to an ungreased 9 x 9 baking dish. Spread the topping over the fruit. Bake for 35 to 40 minutes, until the topping is golden brown.
  4. Cool slightly and serve.
Topping

Place the flour, oats and sugar in a large bowl and stir to mix. Add the butter and mix with fingers or a pastry blender until moist clumps form.
