Beans & Greens

Ingredients
  • 8 to 10 garlic cloves, chopped
  • 2 handfuls parsley, chopped
  • 1 onion, chopped
  • 2 Tbsp olive oil
  • 2 to 3 cups chicken stock
  • 3 cans cannellini beans, drained
  • 3 cans butter beans, drained
  • 2 to 3 cans garbonzo beans, drained
  • 1 big bunch of greens (escarole, swiss chard, endive, etc - whatever you like or have)
  • Salt (to taste)
  • Pepper (to taste)
  • Red pepper flakes (to taste)
  • Oregano (to taste)
Directions

Put olive oil in heated sauce pan or pot Brown garlic slightly Add ½ handful of parsley (will make a green roux) Add chicken stock Add all the beans except 1 can of butter beans Season with salt, pepper, oregano, and red pepper flake to taste Simmer for ½ hour Add greens and simmer for 1 hour Add last can of butter beans, rest of parsley and more chicken stock if necessary to adjust thickness
